As soon as the first batch of home brew is ready, they might be tempted to drink the lot, but steal a few spoonfuls for this luxuriously sumptuous cheese on toast and you won’t be disappointed. Serves 4
250g mature cheddar, grated
1 egg, beaten
2 tbsp. beer
1 tsp. Worcestershire sauce
1 tbsp. wholegrain mustard
Few drops Tabasco sauce
4 large slices of bread
1 tbsp. chopped fresh chives or parsley
Mix the cheese, egg, beer, Worcestershire sauce, mustard and Tabasco sauce together in a small bowl.
Toast the bread and spread the mixture evenly between the slices. Place under a hot grill and cook until the rarebit mixture is hot, bubbling and golden brown.
Sprinkle with chopped herbs and serve with a fresh green salad.
