Fig, mint and goats cheese salad – a veritable feast of summer

 

Here at GG HQ, we’re back from the beach, but our happy team has already been hard at work in the office kitchen, keeping the summer alive with dishes full of good things from the nursery.

Thanks to the glorious weather, our fig trees have been having a ball, and this delicious fig salad isn’t just easy on the eye, it’s a summer holiday on a plate. Follow the simple recipe below to share some summer love with your favourite people. Feeds 4-6

 

  • 4 handfuls of rocket leaves
  • 20 young figs
  • 200g soft goats cheese
  • Small packet of fresh mint, leaves picked, stalks discarded
  • 4 tbsp olive oil
  • 1 tbsp white wine vinegar
  • 2 tsp honey
  • ¼ tsp chopped fresh thyme
  • Salt crystals and black pepper
  • Scatter the rocket leaves over a large, shallow plate.
  • Cut the figs in half and place on top.
  • Break the cheese into small pieces and scatter evenly over the figs.
  • Whisk the oil, vinegar, honey and thyme together and drizzle over the salad.
  • Sprinkle with mint leaves.
  • Season with salt crystals and ground black pepper and serve to your hungry hordes.
