Spicy marinated olives

Marinated olives are quick and easy to make and taste delicious. They will keep in the fridge for up to a week. You will need a large jam jar or container with a lid.

  • 500g olives
  • Peel from an orange
  • 100ml olive oil
  • 3 fresh chillies
  • 2 sprigs fresh rosemary
  • 2 cloves garlic, peeled and thickly sliced
  • 4 bay leaves
  • Sprig of fresh thyme
  • Place all the ingredients in a bowl and mix together. Season with salt and pepper. Pour everything into the jar or container and leave for at least four hours, stirring occasionally.
